Dessert grilled cheese is not something I have considered previously. A major oversight. However, I do suggest that if you are planning one of these for dessert you put a bit of thought into dinner. Plan something light and healthy, like a salad. Don't hoe into one of these sandwiches after a huge plate of pasta, or steak and chips, or you will die. Trust me, I'm a health professional.
You will need:
Sliced bread (we had a lovely spelt sourdough)- lightly buttered on the outside
Raspberries (frozen are fine)
Brie (I used triple cream)
Load up your bread
Pan fry your sandwich. I like to pop the sandwich in the microwave for 20 seconds just to get the cheese soft first.
Possibly one of the easiest and most delicious desserts ever. Trust me, I'm a health professional.
We had these with a lovely little glass of muscat by Stanton & Killeen (we bought this from the cellar door on our Rutherglen winery tour). Luscious with a slightly floral nose and lashings of raisins and honey. As I just googled the wine to give you the link and the price, I noticed that the winemaker has suggested a food match with rich chocolate tart and raspberry coulis. I'm half tempted to email him this recipe- chocolate tart is soo complicated :)This is one of their middle of the range muscats- $34 and widely available.
