Lemon Salmon {Recipe}

I am trying to eat more fish. I am also trying to eat less sugar sugar (the processed stuff) and save my sugar sugar intake for stuff that is really worth the calories (like ice cream and cake!). One night as I was about to make my usual salmon marinade it occurred to me that there was quite a bit of sugar sugar in the recipe so I made something up and it was delicious.

Instead of the usual tablespoon of brown sugar and rich sweet soy sauce I used, this has a tablespoon of maple syrup for sweetness with clean flavours from lemon and rosemary. It reminds me of lemon chicken, but obviously without the chicken :)

You will need:
2 salmon fillets (with or without skin)
1/4 cup lemon juice
1 tsp lemon zest
1 Tbsp maple syrup
1 Tbsp olive oil
1 tsp rosemary, finely chopped
Salt and pepper to taste

Mix the marinade ingredients in a small oven-proof dish and pop the salmon in. Preheat the oven to 180C/360F. While the oven is heating up keep turning the salmon so that the marinade can flavour the meat.

Bake for 15-20 minutes depending on the size of the fillet and how cooked you like them. 15 minutes for two smallish fillets (about 150g/6 oz each) will cook them through. If you like them rarer then 12 minutes will do.

Allow to rest for a few minutes. Then serve with your choice of sides. This sauce is delicious drizzled over steamed vegetables and brown rice for a clean, healthy dinner.

  1. Great idea to use maple-that has more flavour too. Do you taste much of it? :)

    1. I've mostly just used it for a hint of sweetness instead of the brown sugar my standard recipe uses, the actual flavour of the maple syrup was pretty subtle.

  2. I like your attitude towards the sugar! Whenever I find myself having something sugary + pre-packaged, I always feel bad because I could be eating something home-made or more indulgent instead of sugar in lazy-snack form! This fish looks beautiful too, salmon at this time of year is lovely :)

    1. One of my friends at uni used the terms 'worth the calories'. It's a good-un. I find it helps me make sure I really enjoy the sugary treats I eat:)
